So this might be the healthiest carrot cake you’ll ever eat, sweetened with just fruit, a guiltless little dessert, that just takes minutes to make! Plus so moist, and sweet without any added sugars or oils! you can try subbing different flours for whole wheat pastry, spelt may work nicely!
preheat oven 350
1 1/2 cup whole wheat pastry flour
2 teaspoons of baking powder
2 teaspoons of cinnamon
1 tablespoon of vanilla extract
pinch of salt
1/2 cup shredded carrots
15 oz can of crushed pineapple with the juice
1/4 cup mashed banana (very ripe)
1/3 cup raisins
1/4 cup coconut flakes
top: 1/4 cup crushed walnuts and 1/4 cup coconut
Directions: Combine dry ingredients then combine wet separately, (excluding raising and coconut) mix together, fold in raising and coconut. place in a medium size loaf pan.
Bake 350 30-40 minutes
