The number one question I get asked daily-What’s your favorite salad dressing? To be honest, I am usually pretty boring when it comes to that; I just throw on whatever I have laying around. A usual concoction usually consists of mustard, lemon juice and balsamic vinegar… pretty simple. My favorite thing to do is take an almost empty bottle of mustard and fill it with lemon juice, apple cider vinegar, braggs amino acid and shake it up. I not only have an awesome salad dressing but I also have a great salad dressing container! But then I got thinking- I use zucchini all the time in my smoothies to get it creamy, so why not use it in salad dressings?! Then this happened and its kind of great!
- 1 cup zucchini chopped
- 1/2 cup fresh lemon juice
- 1/2 cup water
- 1/4 cup Apple cider vinegar
- 2 garlic cloves
- 3 tablespoons tahini paste
- salt to taste
- Optional fresh herbs and spices
Blend everything in a high speed blender until smooth, store in the refrigerator. Stays fresh for up to two weeks.
