Overnight oats are a great breakfast option on a warm summer morning. I love how easy they are to prepare the night before – one less thing to think about in the morning. Especially for those sneaking in a quick workout before heading to work and barely even have time to shower. There is no excuse to skip breakfast when it’s sitting in the fridge waiting for you that morning. I love adding vegetables to my oats because it doubles the serving size and offers tons more nutrients.
No, I am not crazy! Shredded zucchini in oats actually tastes amazing. Zucchini doesn’t have much flavor and it absorbs whatever flavor that its mixed with. It also has a similar texture to oats. Instead of hiding the fact that I added zucchini I embraced it by calling this Zucchini Bread Over Night Proats. (That stands for Protein Oatmeal – a cool new word I just learned!)
Since breakfast is usually after a workout I like to include a little bit of everything – some complex carbohydrates to replace the glycogen lost during a workout, protein to repair and rebuild muscle and of course, healthy fats. Recipe:
- 1/2 cup old fashion oats (I used Purely Elizabeth ancient grain oats)
- 3/4 cup shredded zucchini
- 1 tablespoon Nuzest Vanilla Protein Powder
- dash cinnamon
- 1 1/2 cup almond milk (or any non dairy milk)
- 1 tablespoon crushed walnuts
- 1 tablespoon raisins

Just wanted you to know this recipe inspired my new favorite breakfast. 3/4 cup grated zucchini, 2 Tbls chia seeds, 2 Tbls oats, 1 tsp maca and 1 cup almond milk. I soak this overnight then top with bananas, coconut and drizzle with coconut butter! You must try!
