My mom made this soup for me, and I totally fell in love! its super simple and flavorful not too mention packed with vitamins! Kabocha is one of my favorite veggies slightly nutty but sweet as well. Top with some Pumpkin Seeds and you have a protein packed veggie filled soup!
What you’ll need:
1 Kabocha Squash
1 Onion
3 Carrots
1 Sweet potato
3 gloves of garlic
1 box of organic vegetable stock
Directions: roast all veggies at 350 for 1 hour or until soft. place them in the blender add vegetable stock and blend until smooth. add water if soup it too thick.

I just wanted to say I love your blog and I follow you on instagram. I like your style of super healthy and simple recipes with lots of raw options. I made the Kabocha soup but added a couple roasted poblano peppers since they were on sale at my co op and it was amazing!
