I love knowing I have a something healthy and nutritious in the freezer. These burgers are so easy to make, and store really well in the freezer. I usually double the recipe and throw a couple on top of a salad, along with hummus or tehini. Whenever Spring/Summer rolls around, I find myself craving these burgers. I adapted the recipe from my aunt, they were originally fried, but that was totally unnecessary and they taste just as good this way!
pre heat oven 375
- 1 1/4 cup dried chickpeas (canned beans will not work)
- 2 gloves of garlic minced
- 1 medium onion chopped
- 1/2 cup fresh cilantro
- 1/4 cup parsley
- 1/2 hot pepper seeded (optional)
- 3 tablespoons of fresh lemon juice
- teaspoon- onion powder, garlic powder, salt
- teaspoon of baking powder
Direction: Soak your chickpeas for 6-12 hours, in filtered water covering them completely. rinse the chickpeas and combine everything in a food processor, making sure everything is well combined. Spread it on a baking sheet let it sit out for at least an hour, before forming burgers. Scoop the mixture into tablespoon size balls flattening them slightly bake at 375 for 7 minutes flip them and bake an additional. 5-7 minutes until golden brown. 10 burgers
