Doesn’t it sometimes feel like the only bread we make is banana bread?
I was chatting with Tiffany Cromwell professional cyclist about bike snacks and things to eat pre-ride/during ride and she told me about this coconut bread she makes! And since I love coconut, it didn’t take long for me to get into the kitchen and start experimenting with her recipe.
As part of the Rapha Women’s 100, Rapah’s yearly event that brings women together on bikes to complete 100k on day in September- Tiffany and I hosted a cooking class and made this bread! I had the opportunity to test the bread out with eggs and flax “eggs” and they both turned out really well. I even tried it with regular coconut milk instead of canned and that worked too! (I definitely prefer the taste of the canned coconut milk version better because it offers a richer coconut flavor.) The bread has tons of texture thanks to the coconut flakes mixed throughout. We also opted to use oat flour, which is my go-to flour for baking. For one, it is way more affordable than almond flour. But it also is really easy to make yourself. Just grind oats in a blender or food processor and process until a flour forms. (I actually never buy oat flour and do this for all my baked goods that require oat flour.)
This recipe has three coconut bursts – coconut flakes, coconut milk and coconut sugar- making it a triple coconut treat! I made the bread and planned to take it on a ride with me but of course it was finished before I headed out the door. This bread is addicting and so perfect with your morning cup of coffee. Plus, as always, really easy to make! Enjoy!
Recipe
- 2 1/2 cups oat flour
- 1 cup shredded unsweetened coconut
- 3/4 cup coconut sugar
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- dash salt
- 1 cup canned coconut milk (full fat or light works, you can even try it with almond milk)
- 2 organic eggs or 2 tablespoon flaxseeds mixed with 5 tablespoons of water – let sit for ten minutes
Directions
- Pre-heat oven to 350 degrees and spray a loaf pan 4×8 with non-stick spray
- In a large mixing bowl combine oat flour, coconut, cinnamon, baking powder, baking soda and salt
- In a medium size bowl whisk together eggs or flax eggs with coconut milk
- Fold wet ingredients into dry ingredients. Mix until well combined
- Add batter into prepared loaf pan. Bake for 40-45 minutes or until toothpick clean
