I pride myself on only posting recipes and working with products I believe in – those that align with my way of eating. That being said, I would never stand behind a product I myself wouldn’t eat. I recently wrote a blog post discussing some of my favorite bar choices. I like the convenience of having a bar on hand when I’m traveling or stuck somewhere and hungry. I did a lot of research for that blog post – I looked into each bar and made sure that all the ingredients were 100% percent clean!
RxBars stood out to me because the ingredients were all foods I would eat on their own. They contain only egg whites, figs, dates and nuts – all foods I enjoy daily! Plus they have 12 grams of protein per bar so they are a great recovery snack. When I first looked at the ingredients I was nervous that the bar would taste too sweet – as if I were just eating dried fruit and nuts. But Rxbars manage to capture the perfect balance of flavors without too much of anything. And they offer so many great flavor combinations.
My first choice was the Coffee Cacao bar – slightly bitter from the coffee, with hints of chocolate and just enough sweetness from the dates. Yum! I even shared one with my brother inlaw he took it on his long ride. He loved it! Said he never felt better on a ride. After that one I tried the Chocolate Sea Salt. This one was really a game changer! It is super chocolatey with bits of salt and so delicious! I also appreciate how this bar does not have that artificial taste or that protein powder taste the way that so many protein snacks do. It tastes like real wholesome foods.
I generally don’t recommend that people eat bars too often because they usually have loads of sweeteners, which can cause you to crave sweets all day! But not these Rxbars. These are the real deal.
I decided to get creative with my favorite (and their newest) flavor, Chocolate Sea Salt, by rolling it out, layering it with fresh fruit, and cutting it up into bite size pieces. Store them in the fridge and you’ve got yourself some bite-sized, protein-filled, strawberry-chocolate goodness.

- 1 RxBar— Chocolate Sea Salt Bar
- 1-2 strawberries sliced
- 1/2 teaspoon fruit-sweetened jelly or my chia jam
- 1 teaspoon unsweetened coconut flakes
- Place your RxBar between two pieces of parchment paper and place in the oven for 4 minutes. It should soften.
- Leave the bar in between both parchment sheets and roll out using a rolling pin
- Once rolled, place jelly on the bar and add strawberries, laying out evenly on the bar. Sprinkle with coconut.
- Starting at the shorter side, roll up and then slice into 5 even pieces
