It’s about time we finally have spring-like weather in New York! Being trapped indoors for most of the winter, I didn’t waste anytime getting outside. I pumped the tires to my bike and got moving! Instead of driving to Pilates, I rode there. Killing two birds with one stone; I got my cardio in, fresh air and even saved some time. You never know what traffic can be like in Brooklyn. Its been a while since I have been to Prospect Park, but it was glorious! Runners were out and bikers were speeding past me. I was taking it all in. I even passed a farmers market on the way and snatched a quick sample of some apples- I know you all do that! Due to Passover this past week, I wasn’t in the kitchen baking and cooking as often as I usually do, so I was excited to get back at it! I picked up a ton of fresh produce from the market.
After class at school, I was browsing Wholefoods in Chelsea and picked up Hilary’s Veggie burgers. Super clean ingredients filled with tons of vegetables and beans, my type of burger! I love how there were only two burgers in a pack so I can try a variety of different flavors.
I wanted to pair the burgers with some of the vegetables I picked up from the farmers market. I got amazing collard greens that would go perfectly with these veggie burgers. I knew a spread would be necessary with the collard green wrap I was going to make. So I came up with this roasted garlic, cauliflower and white bean spread that is super flavorful and creamy. The ingredients work so well together. Totally in love with how this came out! Hope you enjoy it as much as I did… A new lunch staple for sure.
Recipe: Roasted Garlic and Cauliflower White Bean Dip
- 2 15oz cans of organic white cannelloni beans
- 1 head cauliflower (4 cups)
- 1 head garlic (6 cloves)
- 1/2 cup parsley
- 1/2 cup lemon juice
- 1/4 cup water
- 1 tablespoon apple cider vinegar
- salt to taste
Directions: Pre heat oven 375
- Wrap your garlic in tinfoil and place in the oven for 60 minutes or until browned
- Meanwhile, cut your cauliflower into even florets, place on a tray with non-stick spray and bake for around 50 minutes or until golden brown (place it in the oven with your garlic)
- Once cooled place your cauliflower, roasted garlic and remaining ingredients in a food processor
- Purée until creamy, you may need to scrap it down and purée again
- Store in the refrigerator in an air tight container
Hilary’s Veggie Burger Collard Wrap
- 1 Hilary’s Veggie Burger
- 1 collard green
- 1-2 slices tomato
- 1 slice red onion
- 4 tablespoons Roasted Garlic and Cauliflower White Bean Dip
