Cholent is a traditional Jewish Beef stew, hearty and super rich and filling. My family never ate Cholent and I never ate it growing up, but I am always looking for new ideas! So thought this would be perfect and pretty easy to make plant-based. I used Seitan as the protein in the dish, Seitan is a protein derived from wheat. So if you are gluten intolerant feel free to sub for beans, tofu or whatever protein you enjoy. Personally I enjoy Seitan its full of protein and has a meaty texture, I don’t have it often, when I do have it its defiantly a treat!
Recipe:
1 large onion, diced
3 cloves of crushed garlic
3 stalks of celery diced
1 package of seitan
4 carrots diced
1 sweet potato cubed
3 tomatos diced
1 tablespoon of garlic powder, salt, paprika, onion powder
3 tablespoons of tomato paste
1/4 cup of water or vegetable stock
Directions: spray a non stick pan, saute onion for around 5-7 minutes, add garlic, celery, seitan, let it caramelize and get brown then add carrots, sweet potato, tomato, and spices. Let cook over medium heat for around 20 minutes stirring every now and then. Add tomato pasted and water/vegetable stock, mixing so the tomato paste mixes with the water. Leave it cooking on the stove, an hour or so. The longer you cook it the more flavor you would get, so don’t be afraid to leave it for hours on a low heat, just make sure you add additional liquid and stir it.
