I was shopping the other day at Wholefoods and I came across Teff Flour. I’ve always heard so much about it; how women in Ethiopia use it daily and some even credit their amazing ability to run from it. Naturally I was interested in this product and what the actual benefits of including Teff Flour in one’s diet are. I came across some interesting facts that may back up the claims as to why these runners are so good at what they do! Teff Flour is loaded with Iron, Calcium and Fiber. What really turned me on to Teff, is the fact that it helps prevent Anemia which if your an avid runner, you have heard about time and time again. Runners are usually low in Iron or Anemic. I got in the kitchen and started playing around. I had really ripe avocados that needed to be used ASAP so I thought let me use that in place of butter in making bread! To amp up this bread’s nutritional value, I added Tahini and Sesame Seeds which is rich in Calcium! I made this bread using whole wheat pastry flour and wheat germ so it does contain gluten but several people have made this bread with gluten free flours and it worked just fine! So feel free to change it up!
Recipe:
- 1/2 cup teff
- 1 cup wheat germ
- 1/2 cup whole wheat pastry flour
- 1/2 cup nutritional yeast
- 2 teaspoons baking powder
- 1 medium avocado
- 3 tablespoons tahini
- 1 tablespoon of white miso optional
- 3 tablespoons flaxseed mixed with 1/4 warm water set aside
- 1 tablespoon lemon juice
- 1 tablespoon Apple cider vinegar
- 1/2 cup almond milk
